Homemade Wiggle Butt Bacon




Hello friends! This week we officially launched our YouTube Channel by posting our first recipe video; Homemade Wiggle Butt Bacon!

Homemade Wiggle Butt Bacon Recipe

Prep Time: 5 days

Cook Time: Approx. 2 hours


Ingredients

The Meat

1 3LBS Pork Belly with the skin removed that is about 1 inch to 1.5 inches thick.


The Brine

4 Teaspoons SeaSalt

4 Teaspoons Corse Ground Pepper

1/2 Teaspoon Prague Powder #1

1/4 Cup Light Brown Sugar

1/2 Cup of your Favorite Maple Syrup

3/4 Bottled Water


Directions

Day 1
  1. Mix the ingredients for the brine together in a mixing bowl, starting with the dry ingredients and ending with water.

  2. Mix the ingredients well, for about 30 seconds with a whisk.

  3. Pour your brine into a zip-lock bag that is placed inside a container to avoid the bag collapsing while you pour.

  4. Scrape the bottom of the bowl to make sure all the ingredients end up inside the bag.

  5. Carefully place your bacon inside the bag, seal it tightly, and try to squeeze out some of the air from inside the bag.

  6. Put the bag onto a tray to avoid leaking and place it inside the fridge. Leave it in the fridge marinating in the brine for 5 days to achieve the best flavor.


Day 2-4 VERY IMPORTANT: Flip the bacon over once every day to brine the opposite side

Day 5
  1. Heat the smoker to 225°F with the pellets or wood of choice. We used apple pellets for this cook.

  2. Take the bacon out of the brine and gently rinse off the excess salt under a slow stream of cold water.

  3. Put your thermometer into the thickest part of the bacon. We're looking to cook to an internal temperature of 150°F. Approx. cook time is 2 hours.

  4. Once you've reached 150°F, remove it from the smoker, and let it rest in the fridge.

  5. Rest for at least 30 minutes before slicing. We recommend resting for at least 2 hours in the fridge for the bacon to completely cool and set. For the best result, let it rest overnight in the fridge.

  6. After the bacon has had time to rest, slice it to the thickness of your liking and pan fry, air fry or oven fry your deliciously Homemade Wiggle Butt Bacon!
